Glasses with exotic fruits
Finish your holiday meals with a sweet and light touch enjoying these glasses with exotic fruits. Balanced flavors, they will satisfy your taste buds happy.

Ingredients / 4 people

For the tartare of exotic fruit:
1 Victoria pineapple
1 ripe mango
2 passion fruit
2 Kiwis
1 vanilla pod – The vanilla box
For the pesto Coco:
80 g of coconut powder
2 tablespoons walnut oil
4 tablespoons agave syrup
2 tablespoons coconut milk soup
1 tablespoon dark rum or rum pastry
1/2 teaspoon vanilla extract vanilla in box

PREPARATION exotic fruits
1- fruit tartare – preparing at least 6-8 hours in advance: Using a knife, cut the top and the bottom of the pineapple. Then peel the pineapple with a sharp knife and remove the eyes. Detail pineapple sliced, diced and then, without keeping the center. Open the mango into two parts, bypassing the kernel. If the mango is ripe hollow out each half with a tablespoon. Cut the mango slices and half into small cubes. Cut in half and scoop out the passions. Put everything in a bowl. Cut the vanilla bean and scrape the seeds, put the seeds and pod in the fruit tartar and mix well. Keep cool
2 – coconut pesto: In a bowl, mix the coconut, walnut oil, agave syrup, coconut milk, rum and finally the vanilla powder. The consistency should be thick enough and do some packets, much like a crumble.
Dressage Cut kiwi slice and using a pastry cutter or star-shaped trim kiwi at your convenience (small cubes, sun …). In the back of your sphere, place the fruit tartare and coconut pesto and finally the kiwi. Decorate with a pretty parasol color of your choice. Close the sphere and book fees.
